Baked Potato

One of my favourite cheap and oh so easy recipes for a great, warming evening meal:

Bake one large potato per person for approx 1 hour at around 200C
When baked, carefully (they will be hot!) slice each potato in half
Scoop out potato from skins and mash with grated cheese and butter
Place mashed mixture back into skins and serve immediately
For a dessert, yoghurt or fresh fruit.

After quite a long day and your tired on your feet, as I was today, something easy that requires no real thought or measuring or even watching over, is just what you need to finish the day off before you soak in the bath or read your book or, heaven forbid, couch out in front of the TV for a couple of hours.

Today was rather pleasant though. It was a nice autumnal day, sun shining, clear blue sky’s etc so the 4 miles I cycle to the work search support group I have to attend every other week was really pleasant. I had a good chat with my advisor, it’s more like meeting up with an old friend over coffee and chatting about your efforts to find a new job than what others I know have to do to fulfil their work search requirements. I guess I’m the lucky one. I then cycled the 4 miles home again.

Now all of a sudden it’s after 9pm and I’m thinking seriously about that bath I promised myself early this afternoon.

I had a creative thought today whilst cycling, I’m not certain if it will lead to anything other than a short poem but I’m just too tired to think anymore about it tonight. Hopefully tomorrow I’ll find an hour or two of solitude.

Oh, one more thing. There were over 100 page views of the few pages I added last month. I’d like to thank everyone that visited and read my thoughts (rubbish really).
